Ingredients
  

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter melted

For the Filling:

  • 8 oz cream cheese softened
  • 1 can 14 oz sweetened condensed milk
  • 1 can 8 oz crushed pineapple, drained
  • 1 cup whipped topping
  • ½ cup shredded coconut
  • 2 tablespoons lemon juice
  • ½ teaspoon vanilla extract

Instructions
 

Prepare the Crust:

  • In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch pie dish, forming an even crust. Refrigerate the crust for 15 minutes to set.

Make the Filling:

  • In a large bowl, beat cream cheese until smooth. Add sweetened condensed milk, pineapple, coconut, lemon juice, and vanilla extract. Mix until fully combined.

Assemble the Pie:

  • Fold in whipped topping gently. Pour the filling into the prepared crust, spreading it evenly.

Chill:

  • Refrigerate the pie for at least 4 hours, or preferably overnight, to allow it to set.

Serve:

  • Serve chilled, topped with extra shredded coconut or whipped cream if desired.
