Ingredients
  

  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk warmed
  • 2 cups shredded white American cheese or queso blanco
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 4 oz can diced green chiles (optional)
  • Salt to taste
  • Jalapeños or hot sauce for heat (optional)

Instructions
 

Make a Roux:

  • In a saucepan over medium heat, melt butter and whisk in flour. Cook for 1 minute to form a roux.

Add Milk:

  • Gradually whisk in warm milk, stirring constantly until the mixture thickens—about 2–3 minutes.

Melt the Cheese:

  • Lower heat and stir in the shredded cheese a little at a time until completely melted and smooth.

Season:

  • Stir in garlic powder, onion powder, green chiles, and any optional spice or jalapeños. Add salt to taste.

Serve:

  • Serve warm with tortilla chips, nachos, or as a topping for burritos and enchiladas.

Notes

Keep Warm: Use a small slow cooker or fondue pot to keep dip warm and smooth at parties.
Spicy Option: Stir in diced jalapeños, a splash of hot sauce, or smoked paprika.
Storage: Store leftovers in the fridge up to 4 days; reheat gently with a splash of milk.
Make It Thinner: Add more milk to loosen consistency if needed.
