Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar plus extra for rolling
  • 1 large egg
  • ¼ cup eggnog
  • 1 teaspoon vanilla extract
  • 1 teaspoon rum extract optional

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Mix Dry Ingredients:

  • In a medium bowl, whisk together flour, baking soda, nutmeg, cinnamon, and salt. Set aside.

Cream Butter and Sugar:

  • In a large bowl, cream the softened butter and 1 cup sugar together until light and fluffy. Add egg, eggnog, vanilla extract, and rum extract (if using), mixing until combined.

Combine Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.

Shape the Cookies:

  • Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in granulated sugar, then place them on the prepared baking sheet, spacing them about 2 inches apart.

Bake:

  • Bake for 10–12 minutes, or until the edges are lightly golden. Let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Make Ahead:
Prepare the dough in advance and refrigerate for up to 2 days before baking for a firmer dough. You can also freeze the dough for up to 1 month.
Customizing the Flavor:
Add a pinch of ground ginger or cloves for extra holiday warmth. For a richer flavor, drizzle with eggnog glaze after baking.
