Mediterranean Orzo Salad Recipe (Bright, Make-Ahead, Crowd-Pleasing)

Last spring I needed a side dish that could survive a 4-hour road trip to Maryland, and this Mediterranean orzo salad became my secret weapon. The small grain-like pasta holds the lemon-garlic dressing without turning mushy, while the fresh vegetables stay crisp even in a cooler bag. Now my family requests it for every gathering, from beach picnics to summer celebrations.

Ingredients
  

For the Salad

  • 2 cups orzo pasta uncooked
  • 2 cups cherry tomatoes halved
  • 1 medium cucumber diced
  • 1 small red onion thinly sliced
  • 1 cup kalamata olives pitted and halved
  • 1 cup crumbled feta cheese
  • ¼ cup fresh parsley chopped

For the Lemon-Garlic Vinaigrette

  • ¼ cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package directions until al dente, about 8-10 minutes. Drain in a colander and rinse briefly with cool water to stop the cooking process. Transfer to a large mixing bowl.
  • While the pasta cooks, prepare the vinaigrette by whisking together olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper in a small bowl. Set aside.
  • Add the halved cherry tomatoes, diced cucumber, sliced red onion, kalamata olives, crumbled feta cheese, and fresh chopped parsley to the cooled orzo pasta.
  • Pour the lemon-garlic vinaigrette over the salad and toss gently but thoroughly until all ingredients are evenly coated. The orzo should glisten with dressing.
  • Cover and refrigerate for at least 30 minutes before serving, or up to 3 days ahead. This waiting time allows the flavors to meld and develop beautifully.
  • Before serving, give the salad a gentle stir and taste for seasoning. Add extra salt, pepper, or lemon juice as needed. Serve chilled or at room temperature.

Notes

Tip: Cook the orzo just until al dente to prevent mushiness. Storage: Keep in an airtight container in the refrigerator for up to 3 days. The salad actually tastes better the next day as flavors meld together. Variation: Swap feta cheese for fresh mozzarella, or add chickpeas for extra protein and fiber.
