Ingredients
  

  • 1 lb ground chicken
  • 2 tablespoons breadcrumbs or almond flour for low-carb
  • 1 egg
  • 2 cloves garlic minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill or mint
  • 1 teaspoon lemon zest
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil for cooking

Instructions
 

Mix Meatball Ingredients:

  • In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, herbs, lemon zest, cumin, salt, and pepper. Mix gently until well combined.

Shape Meatballs:

  • Form into 1-inch meatballs using damp hands. You should get about 20.

Cook Meatballs:

  • Heat olive oil in a large skillet over medium heat. Add meatballs in batches and cook 7–8 minutes, turning to brown all sides, until cooked through (165°F internal temperature).

Serve:

  • Serve warm with tzatziki, over rice, or in pita with veggies.
