2clovesgarlicminced
½cupheavy cream
¼cupchicken brothor white wine
¼cupgrated Parmesan cheeseplus more for serving
1tablespoonchopped fresh parsley
½teaspoondried Italian herbsor a mix of oregano, basil, and thyme
Salt and pepper to taste
Optional: Red pepper flakes for a little heat
Instructions
Prepare salmon: Pat the salmon fillets dry with paper towels. Season them with salt and pepper.
Sear salmon: Heat the olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side down (if using skin-on fillets) in the skillet and sear for 3-4 minutes, until the skin is crispy and the salmon is browned. Flip the fillets and sear for another 2-3 minutes, or until cooked through. The internal temperature should reach 145°F (63°C). Remove the salmon from the skillet and set aside.
Make the sauce: In the same skillet, add the chopped sun-dried tomatoes and minced garlic. Cook for 1 minute, until fragrant. Pour in the heavy cream and chicken broth (or white wine). Bring to a simmer and cook for 5-7 minutes, until the sauce has thickened slightly.
Add Parmesan and herbs: Stir in the Parmesan cheese, parsley, Italian herbs, and red pepper flakes (if using). Season with salt and pepper to taste.
Return salmon to skillet: Return the salmon fillets to the skillet and coat them with the sauce.
Serve: Serve the Marry Me Salmon immediately, spooning the sauce over the salmon. Garnish with additional Parmesan cheese and fresh parsley, if desired.
Notes
Salmon: Use fresh or frozen salmon fillets. If using frozen salmon, thaw them completely before cooking.
Sun-dried Tomatoes: Oil-packed sun-dried tomatoes are preferred for this recipe. Make sure to drain them well before chopping.
Doneness: Use a meat thermometer to ensure the salmon is cooked to the proper internal temperature.
Sauce Consistency: If the sauce is too thick, add a little more chicken broth or cream.
Variations:
Spinach and Artichoke Marry Me Salmon: Add spinach and artichoke hearts to the sauce.
Lemon Marry Me Salmon: Add lemon zest and juice to the sauce for a bright and citrusy flavor.
Mushroom Marry Me Salmon: Add sliced mushrooms to the sauce along with the sun-dried tomatoes.
Shrimp Marry Me Pasta: Serve the sauce over pasta and add cooked shrimp. You can also use the sauce with chicken or other proteins.
