2cupsbaby spinach
¼cupfresh basil, chopped
½teaspoonsalt
¼teaspoonblack pepper
Instructions
Season the Chicken
Toss the chicken pieces with Italian seasoning, salt, and black pepper until evenly coated.
Cook the Chicken
Heat the olive oil in a large deep skillet over medium-high heat. Add the chicken and cook for 5–7 minutes, stirring occasionally, until golden and cooked through. Transfer the chicken to a plate.
Toast the Orzo
Add the sun-dried tomato oil to the same skillet. Add the orzo and cook for 1–2 minutes, stirring frequently, until lightly toasted.
Add the Aromatics
Stir in the chopped sun-dried tomatoes and minced garlic. Cook for 30 seconds until fragrant.
Simmer the Orzo
Pour in the chicken broth and stir in the Italian seasoning, red pepper flakes, salt, and black pepper. Bring to a gentle simmer, then reduce the heat to medium-low. Cook uncovered for 8–10 minutes, stirring frequently, until the orzo is tender and most of the liquid has been absorbed.
Make It Creamy
Reduce the heat to low. Stir in the heavy cream and grated Parmesan until the cheese melts and the sauce becomes smooth and creamy.
Add the Spinach and Chicken
Stir in the baby spinach until wilted. Return the cooked chicken and any juices to the skillet and cook for 2–3 minutes until heated through.
Finish and Serve
Remove from the heat and stir in the fresh basil. Let the orzo rest for 2 minutes so the sauce thickens, then serve warm with extra Parmesan if desired.
