In a large skillet, heat olive oil over medium heat. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
Cook the chicken breasts in the skillet for 6-7 minutes per side, until golden brown and cooked through (internal temperature should be 165°F). Remove from the skillet and set aside.
In the same skillet, melt butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
Add the chopped sun-dried tomatoes and spinach to the skillet, cooking for 2-3 minutes until the spinach wilts.
Stir in the heavy cream, chicken broth, and Parmesan cheese, and bring the mixture to a simmer. Let it cook for 5 minutes, or until the sauce thickens slightly.
Meanwhile, cook the tortellini according to package instructions, then drain.
Slice the cooked chicken breasts into strips and add them back into the skillet with the sauce.
Add the cooked tortellini to the skillet and toss everything together to coat in the creamy sauce.
Cook for an additional 2-3 minutes, allowing the tortellini to soak up some of the sauce.
Serve hot, garnished with fresh basil if desired.
