Ingredients:

  • 1 lb button mushrooms cleaned and trimmed
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup fresh parsley chopped, for garnish

Instructions
 

Blanch Mushrooms:

  • Bring a pot of water to boil and blanch mushrooms for 2-3 minutes. Drain and cool.

Prepare Marinade:

  • In a bowl, whisk together olive oil, red wine vinegar, garlic, oregano, salt, and black pepper.

Marinate Mushrooms:

  • Add mushrooms to the marinade, toss well to coat.

Chill:

  • Cover and refrigerate for at least 1 hour to allow flavors to blend.

Serve:

  • Garnish with fresh parsley and serve chilled or at room temperature.
