  • 1 small red onion thinly sliced

  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano optional
  • Fresh herbs parsley or dill, for garnish

Instructions
 

  • Combine cucumbers, tomatoes, and onion in a large bowl.
  • In a separate bowl, whisk together vinegar, water, olive oil, sugar, salt, pepper, and oregano.
  • Pour marinade over vegetables and toss to coat.
  • Cover and refrigerate for at least 1 hour to allow flavours to meld.
