  • Fresh or frozen mango chunks
  • Chia seeds
  • Shredded coconut unsweetened, for texture and flavor
  • Maple syrup or honey optional, for sweetness
  • Vanilla extract optional
  • Pinch of salt optional
  • Optional: Extra fresh mango or shredded coconut for topping

Instructions
 

  • Prepare Mango: If using fresh mango, dice it into small chunks. If using frozen, you can add it directly to the jar; it will thaw and soften overnight.
  • Combine Ingredients: In a jar or airtight container, combine the rolled oats, coconut milk, mango chunks, chia seeds, shredded coconut, maple syrup (if using), vanilla extract (if using), and a pinch of salt (if using).
  • Stir Well: Stir all ingredients thoroughly until well combined. Ensure there are no dry pockets of oats, chia seeds, or shredded coconut at the bottom.
  • Chill: Cover the jar or container and refrigerate for at least 4 hours, but ideally overnight (8+ hours). This allows the oats to soften and the chia seeds to swell, creating a thick and creamy consistency.
  • Serve: The next morning, give the oats a good stir. If the consistency is too thick for your preference, add a splash more coconut milk or water until it reaches your desired texture.
  • Add Toppings (Optional): Enjoy your mango coconut overnight oats as is, or enhance them with your favorite toppings.

Notes

  • Mango: Both fresh ripe mango and frozen mango work well. Frozen mango will tint the oats slightly more yellow as it thaws.
  • Sweetness: Adjust the amount of sweetener based on the sweetness of your mango and your personal preference.
  • Consistency: The amount of liquid can vary slightly. If you prefer a thinner consistency, add a bit more milk in the morning.
  • Storage: Mango Coconut Overnight Oats can be stored in an airtight container in the refrigerator for up to 3 days.
