4large flour tortillas

Instructions
Cook the steak:
Heat olive oil in a large skillet over medium-high heat. Add the sliced steak and season with chili powder, cumin, smoked paprika, salt, and pepper.
Cook the steak for 4-5 minutes, stirring occasionally, until browned and cooked through. Remove from the skillet and set aside.
Sauté the vegetables:
In the same skillet, add the onion, bell pepper, and garlic. Sauté for 3-4 minutes, until softened and slightly caramelized. Remove from heat and set aside.
Assemble the quesadillas:

Grill the quesadillas:

Remove the quesadilla from the skillet and set aside. Repeat with the remaining quesadillas, adding more butter as needed.
