Ingredients

For the Nachos:

  • 1 32-ounce bag frozen tater tots
  • 1 pound ground beef
  • ½ cup BBQ sauce
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Toppings (Optional):

  • ½ cup cooked crispy bacon pieces
  • ¼ cup sliced jalapeños
  • ½ cup diced tomatoes
  • ¼ cup diced red onions
  • 2 tablespoons chopped green onions
  • Sour cream and extra BBQ sauce for drizzling

Instructions

Bake the Tater Tots:

  • Preheat the oven to 425°F (220°C). Arrange tater tots on a baking sheet and bake according to package instructions until golden and crispy.

Cook the Beef:

  • In a large skillet over medium heat, cook ground beef until browned. Drain excess fat. Add BBQ sauce, chili powder, garlic powder, onion powder, salt, and pepper. Stir well and simmer for 3–4 minutes.

Assemble the Nachos:

  • Spread baked tater tots on an oven-safe platter or cast-iron skillet. Top with BBQ beef mixture, cheeses, bacon, and jalapeños.

Bake Again:

  • Return to the oven and bake for 5–7 minutes, or until the cheese is melted and bubbly.

Add Final Toppings:

  • Remove from oven and top with diced tomatoes, red onions, green onions, sour cream, and a drizzle of BBQ sauce.

Notes

  • Make Ahead: Cook and season the beef mixture in advance, then assemble and bake when ready to serve.
  • Customizing the Flavor: Swap BBQ beef for pulled pork or shredded chicken for variety. Add jalapeño ranch for extra spice.
  • Serving Suggestions: Serve with cold drinks at parties or as a hearty movie-night snack.
  • Storage Tips: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
