Loaded Baked Potato Dip Recipe (Cheesy, Baconey, Crowd-Favorite)

This loaded baked potato dip is my absolute go-to whenever we have guests over, and honestly, it disappears faster than I can set it on the table. My brother-in-law brought it to our Super Bowl party years ago, and it caused such a frenzy that 14 people finished the entire bowl in under 20 minutes. Now it is a permanent fixture at every celebration in our house because it delivers that cozy baked potato flavor in an irresistibly scoopable form.

Ingredients
  

  • 2 cups russet potatoes peeled, cut into ½-inch cubes, boiled until just tender, then drained and cooled
  • 8 ounces cream cheese softened to room temperature
  • 1 cup sour cream full-fat works best
  • 1.5 cups sharp cheddar cheese shredded
  • 8 slices bacon cooked until crispy, then chopped
  • 4 stalks green onions sliced, white and light green parts separated from dark green tops
  • ¼ teaspoon garlic powder optional
  • ¼ teaspoon black pepper freshly cracked
  • ½ teaspoon salt or to taste

Instructions
 

  • In a large mixing bowl, combine the softened cream cheese, sour cream, and 1 cup of the shredded cheddar cheese. Stir until smooth and well combined, breaking up any lumps of cream cheese as you go.
  • Fold the cooled potato cubes gently into the cream cheese mixture along with the white and light green parts of the sliced green onions. Season with garlic powder, black pepper, and salt, tasting as you go and adjusting seasoning to your preference.
  • Transfer the dip to a serving bowl and smooth the top. Sprinkle the remaining ½ cup of shredded cheddar cheese evenly over the surface, then scatter the chopped crispy bacon on top. Finish with the dark green tops of the green onions for color and fresh onion flavor.
  • Serve immediately at room temperature with crispy potato chips, crackers, crispy bacon bits, or fresh vegetables for dipping. The dip is best enjoyed fresh, but it will keep covered in the refrigerator for up to 3 days.

Notes

Make this dip up to 4 hours ahead and chill until serving time. You can stir in the toppings just before guests arrive. Storage: Keep leftovers covered in the refrigerator for up to 3 days. Reheat gently in a 300F oven for 10 minutes or in the microwave. Variation: Swap sharp cheddar for smoked cheddar for deeper flavor, or add crispy fried onions on top for extra crunch.
