Lasagna Soup is a comforting and flavorful dish that brings all the rich, cheesy goodness of classic lasagna in a cozy bowl. Ingredients
  

  • 1 lb ground beef or Italian sausage
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 28 oz can crushed tomatoes
  • 1 15 oz can tomato sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes optional
  • 8 lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh basil chopped (for garnish)

Instructions
 

Step No.1: Brown the Beef

  • In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat and add the diced onion and garlic. Cook for 2-3 minutes until softened.

Step No.2: Add Broth and Tomatoes

  • Pour in the beef broth, crushed tomatoes, and tomato sauce. Stir in Italian seasoning, salt, black pepper, and red pepper flakes. Bring to a simmer.

Step No.3: Cook the Pasta

  • Add broken lasagna noodles to the soup and let them cook for about 10 minutes, or until tender. Stir occasionally to prevent sticking.

Step No.4: Make the Cheese Mixture

  • In a small bowl, mix ricotta cheese, shredded mozzarella, and grated Parmesan. Set aside.

Step No.5: Serve and Garnish

  • Ladle the soup into bowls and top each serving with a spoonful of the cheese mixture. Garnish with fresh basil and serve warm.
