Ingredients
  

Chicken & Tortillas:

  • 4 cups cooked chicken shredded
  • 12 corn tortillas cut into pieces

Creamy Sauce:

  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • ½ cup sour cream

Vegetables & Seasoning:

  • 1 yellow onion diced
  • 1 green bell pepper diced
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ½ teaspoon cumin

Cheese:

  • 2 cups cheddar cheese shredded

Instructions
 

Preheat Oven:

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.

Cook Vegetables:

  • In a skillet, sauté onion and bell pepper for 5 minutes until softened.

Make Sauce:

  • Stir in cream soups, tomatoes with green chilies, chicken broth, sour cream, garlic powder, chili powder, and cumin. Simmer for 3 minutes.

Layer Casserole:

  • Layer tortillas in the baking dish, followed by chicken, sauce mixture, and cheese. Repeat layers until ingredients are used.

Bake:

  • Bake uncovered for 35–40 minutes until hot and bubbly.

Rest & Serve:

  • Let casserole rest for 10 minutes before serving warm.

Notes

  • Rotisserie chicken makes prep easier.
  • Monterey Jack cheese works well too.
  • Top with cilantro, avocado, or jalapeños before serving.
