July 4th Cornbread Muffins are golden, moist, and lightly sweetened with a festive twist. Perfect for patriotic celebrations, BBQs, and summer picnics, they pair beautifully with grilled meats and classic sides.

Ingredients
  

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • ¼ cup melted butter plus more for greasing
  • ¼ cup vegetable oil
  • Optional: red and blue chopped bell peppers or blueberries for festive colour

Instructions
 

Preheat Oven:

  • Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.

Mix Dry Ingredients:

  • In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.

Mix Wet Ingredients:

  • In another bowl, beat together milk, eggs, melted butter, and oil.

Combine & Add Colour:

  • Pour wet mixture into dry ingredients and stir until just combined. Fold in optional red and blue add-ins if using.

Bake:

  • Spoon batter evenly into muffin cups. Bake for 15–18 minutes, or until golden and a toothpick comes out clean.

Cool & Serve:

  • Cool slightly before serving warm with butter or honey.

Notes

  • Festive Tip: Add finely chopped red bell pepper and blueberries for a red, white, and blue look.
  • Sweeter Muffins: Increase sugar to ⅓ cup for a dessert-style muffin.
  • Make Ahead: Bake a day in advance and reheat before serving.
