Ingredients

  • 4 cups fresh strawberries hulled and chopped
  • 1 jalapeno pepper seeded and finely chopped
  • 2 cups granulated sugar
  • 2 tablespoons lemon juice
  • 1 package 1.75 oz fruit pectin (optional, for thicker jam)

Instructions

Prepare Fruit:

  • In a large pot, combine strawberries, jalapeno, sugar, and lemon juice. Stir well.

Cook the Jam:

  • Bring mixture to a boil over medium-high heat, stirring constantly. Boil hard for 1-2 minutes.

Add Pectin (Optional):

  • If using, stir in fruit pectin and boil for another minute, stirring constantly.

Test Thickness:

  • Spoon a small amount on a cold plate. If it wrinkles when pushed, the jam is ready. If not, cook a little longer and test again.

Jar the Jam:

  • Pour hot jam into sterilized jars, leaving ¼ inch headspace. Seal immediately.

Cool and Store:

  • Let jars cool at room temperature. Store in the refrigerator for up to 3 weeks or process in a water bath for longer shelf life.

Notes

  • Heat Level: Adjust jalapeno amount to your taste for mild or extra spicy jam.
  • Use: Great on toast, with cream cheese, or as a glaze for grilled meats.
  • Storage: Refrigerate after opening. Can be frozen for longer storage.
