Ingredients

  • ½ cup crushed pineapple drained
  • 2 teaspoons ground cinnamon for rolling
  • ¼ cup granulated sugar for rolling

Instructions
 

Preheat Oven:

  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

Mix Dry Ingredients:

  • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

Cream Butter and Sugar:

  • Stir in crushed pineapple until evenly combined.

Combine:

  • Gradually add dry ingredients, mixing until a soft dough forms.

Prepare Rolling Sugar:

  • In a small bowl, mix cinnamon and ¼ cup sugar.

Shape Cookies:

  • Roll dough into 1-inch balls, then roll each ball in cinnamon sugar mixture. Place on prepared baking sheets 2 inches apart.

Bake:

  • Bake for 10-12 minutes until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
