Ingredients

  • lbs sirloin steak cut into 1½-inch cubes
  • 1 red bell pepper cut into chunks
  • 1 white onion cut into chunks
  • 1 cup blue potatoes or purple potatoes parboiled and halved
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 garlic cloves minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

Make Marinade:

  • In a bowl, whisk together olive oil, soy sauce, vinegar, Worcestershire, garlic, oregano, salt, and pepper.

Marinate Steak:

  • Place steak cubes in the marinade. Cover and refrigerate for at least 1 hour (or up to 4 hours).

Prepare Veggies:

  • While steak marinates, parboil potatoes for 5 minutes until just tender. Drain and set aside.

Assemble Kebabs:

  • Thread steak, red pepper, onion, and blue potatoes onto skewers in a red, white, and blue pattern.

Grill Kebabs:

  • Preheat grill to medium-high. Grill kebabs for 10–12 minutes, turning every few minutes, until steak is cooked to your liking and vegetables are slightly charred.

Serve:

  • Let rest for 5 minutes. Serve hot with your favorite sides like corn on the cob or pasta salad.

Notes

  • Skewer Tip: Soak wooden skewers in water for 30 minutes before grilling.
  • Cook Preferences: Adjust grilling time for rare, medium, or well-done steak.
  • Veggie Swap: Use mushrooms or zucchini if preferred.
  • Make Ahead: Marinate meat and prep veggies ahead for quick assembly.
  • Serving Idea: Drizzle with chimichurri or BBQ sauce for extra flavor.
