Cut the chicken breasts into bite-sized pieces.

In another shallow bowl, place the beaten eggs.
In a third shallow bowl, place the panko breadcrumbs.
Dredge each piece of chicken in the flour mixture, then dip in the beaten eggs, and finally coat with the panko breadcrumbs.
Place the breaded chicken pieces on a baking sheet lined with parchment paper.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and crispy.
While the chicken is baking, prepare the hot honey sauce by mixing the honey, hot sauce, and melted butter in a small bowl.
Once the chicken is done, drizzle the hot honey sauce over the chicken pieces.
To assemble the bowls, divide the cooked rice among four bowls.
Top each bowl with the crispy hot honey chicken, shredded lettuce, cherry tomatoes, avocado slices, and crumbled feta cheese.
Garnish with fresh cilantro and serve immediately.
