These Hot Chocolate Brownie Cookies are rich, fudgy, and loaded with melty chocolate chips and gooey marshmallows—just like your favourite winter drink, but in cookie form. Perfect for cosy holidays and cold-weather cravings!

Ingredients
  

  • 1 cup unsalted butter melted
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • Optional: crushed peppermint or extra chocolate chunks for topping

Instructions
 

Prepare Dough:

  • In a large bowl, whisk together melted butter and sugar. Mix in eggs and vanilla. Stir in flour, cocoa powder, baking soda, and salt until a dough forms.

Add Mix-ins:

  • Fold in chocolate chips and mini marshmallows. Chill dough in the fridge for 30 minutes.

Preheat Oven:

  • Preheat to 350°F (175°C) and line baking sheets with parchment paper.

Shape and Bake:

  • Scoop dough into balls (about 1.5 tablespoon each) and place 2 inches apart. Bake for 9–11 minutes, until set at edges but soft in the centre.

Cool:

  • Let cool on pan for 5 minutes, then transfer to a wire rack.
