HONEY PISTACHIO CRUSTED SALMON

Ingredients
  

For the Salmon:

  • 4 fillets salmon (6 oz each) skin on or off
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Crust:

  • ½ cup pistachios chopped
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon zest
  • 1 tablespoon bread crumbs

Instructions
 

Prepare Salmon:

  • Preheat oven to 400°F (200°C). Brush salmon fillets with olive oil and season with salt and pepper.

Make Pistachio Crust:

  • In a bowl, combine chopped pistachios, honey, Dijon mustard, lemon zest, and bread crumbs.

Apply Crust:

  • Spread pistachio mixture evenly over the top of each salmon fillet.

Bake Salmon:

  • Place salmon on a lined baking sheet and bake for 15-20 minutes, until salmon is cooked through and crust is golden.

Serve:

  • Remove from oven, let rest 2-3 minutes, then serve warm with your choice of sides.

Notes

  • Resting: Let salmon rest a few minutes for best texture.
  • Crust: Chop pistachios finely for even coverage.
  • Serving: Serve with roasted vegetables, salad, or rice.
  • Make Ahead: Crust mixture can be prepared a day ahead and stored in refrigerator.
  • Baking: Do not overbake to prevent dryness; check for doneness at 145°F internal temperature.
