This Homemade Pollo Loco is juicy, citrus-marinated grilled chicken bursting with flavour. Inspired by the popular restaurant dish, it's easy to make at home and perfect for weeknight dinners, tacos, burrito bowls, or salads.

Ingredients
  

For the Marinade:

  • ¼ cup lime juice
  • ¼ cup orange juice
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • ½ teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Chicken:

  • 4 boneless skinless chicken thighs or breasts

Instructions
 

Step 1 – Marinate the Chicken:

  • In a bowl, mix all marinade ingredients.
  • Place chicken in a resealable bag or dish. Pour marinade over it.
  • Refrigerate for at least 1 hour, or up to 8 hours for best flavor.

Step 2 – Grill the Chicken:

  • Preheat grill or skillet over medium-high heat.
  • Remove chicken from marinade and grill for 5–6 minutes per side, or until internal temperature reaches 165°F (74°C).

Step 3 – Serve:

  • Let rest for a few minutes.
  • Slice and serve with rice, beans, or tortillas.
