HOLIDAY SALAD WITH BALSAMIC DRESSING

Ingredients
  

Salad:

  • 8 cups mixed greens such as romaine, spinach, kale, or a spring mix
  • 1 cup dried cranberries
  • 1 cup pomegranate arils seeds
  • ½ cup pecans or walnuts, toasted
  • ½ cup crumbled feta cheese or goat cheese optional

Balsamic Dressing:

  • ¼ cup balsamic vinegar
  • ½ cup olive oil
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 clove garlic minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Prepare dressing: In a small bowl, whisk together the balsamic vinegar, olive oil, honey (or maple syrup), Dijon mustard, minced garlic, salt, and pepper until well combined. You can also combine these ingredients in a jar with a tight-fitting lid and shake vigorously until emulsified.
  • Prepare salad: In a large bowl, combine the mixed greens, dried cranberries, pomegranate arils, and toasted pecans (or walnuts).
  • Add cheese (optional): If using feta or goat cheese, crumble it over the salad.
  • Dress salad: Just before serving, drizzle the balsamic dressing over the salad and toss gently to coat.
  • Serve: Serve the Holiday Salad immediately.

  • Greens: Use a variety of greens for visual appeal and different textures.
  • Dried Cranberries: You can use sweetened or unsweetened dried cranberries.
  • Pomegranate Arils: Pomegranate arils add a burst of sweetness and a beautiful ruby red color.
