¼teaspoonred pepper flakesoptional
½cuppasta waterreserved
1cupcherry tomatoeshalved (optional)
2cupsfresh spinachoptional
1tablespoonolive oil

Instructions
Cook Pasta:
Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve ½ cup pasta water, then drain pasta and set aside.
Blend Cottage Cheese Sauce:
In a high-speed blender or food processor, combine cottage cheese, Parmesan cheese, garlic, salt, pepper, and red pepper flakes (if using). Blend until completely smooth and creamy (about 30-60 seconds).
Sauté Add-ins (Optional):
Heat olive oil in a large skillet over medium heat. If using cherry tomatoes, add them and sauté for 2-3 minutes until they begin to soften and blister.
Heat Sauce:
Pour the blended cottage cheese sauce into the skillet. If using spinach, add it now. Cook over medium-low heat for 2-3 minutes, stirring frequently, until warmed through and slightly thickened.
Combine Pasta and Sauce:
Add cooked pasta to the skillet. Toss to coat, adding reserved pasta water a little at a time until sauce reaches desired consistency (sauce will thicken as it cools).
Garnish & Serve:
Garnish with fresh basil and extra Parmesan cheese. Serve immediately.
Notes
Make Ahead: Cottage cheese sauce can be blended up to 3 days in advance and stored in the refrigerator. Stir before using.
Variations: Add cooked chicken, shrimp, or turkey sausage for extra protein. Use sun-dried tomatoes instead of cherry tomatoes. Add mushrooms or roasted red peppers. Use cottage cheese sauce as a pizza base or baked potato topping.
Serving Suggestions: Serve with garlic bread and a side salad. Top with crispy bacon bits or toasted breadcrumbs for texture. Great for meal prep lunches.
Allergy-Friendly: Use gluten-free pasta. Use dairy-free Parmesan and dairy-free cottage cheese (available from brands like Kite Hill or Good Planet) for dairy-free version. Use lentil or chickpea pasta for extra protein.
Storage Tips: Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop with a splash of milk, or microwave in 30-second increments. Not recommended for freezing (texture changes).
