This high-protein chicken burrito bowl combines seasoned chicken, brown rice, black beans, corn, and fresh toppings for a satisfying family meal. Each bowl provides approximately 40g of protein and is perfect for meal prep.
Cook the brown rice according to package directions until tender. Fluff with a fork and keep warm.
Season the Chicken
In a bowl, toss the diced chicken with olive oil, taco seasoning, lime juice, and minced garlic until evenly coated.
Cook the Chicken
Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 8–10 minutes, stirring occasionally, until browned and the internal temperature reaches 165°F (74°C).
Prepare the Sauce
In a small bowl, whisk together the Greek yogurt, lime juice, garlic powder, and salt until smooth.
Warm the Beans and Corn
Warm the black beans and corn in a skillet or microwave until heated through.
Assemble the Bowls
Divide the cooked rice among 6 bowls. Top evenly with chicken, black beans, corn, tomatoes, red onion, romaine lettuce, and shredded cheddar cheese.
Finish and Serve
Drizzle each bowl with the Greek yogurt lime sauce. Garnish with fresh cilantro, avocado, and lime wedges before serving.
