HEAVENLY WHITE CHOCOLATE CAKE WITH PINEAPPLE FILLING

This elegant white chocolate cake is incredibly moist and tender, layered with a luscious pineapple filling. It’s the perfect dessert for celebrations, spring gatherings, or whenever you crave a fruity twist on a classic white cake.
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, beat butter, oil, and sugar until fluffy. Add egg whites, vanilla, and almond extract. Mix in melted white chocolate. Alternate adding dry ingredients and buttermilk. Divide between pans and bake for 30–35 minutes or until a toothpick comes out clean. Cool completely.
Prepare the Pineapple Filling:
In a saucepan, combine crushed pineapple with juice, sugar, and cornstarch. Cook over medium heat until thickened. Let cool before using.
Assemble the Cake:
Place one cake layer on a serving plate. Spread pineapple filling over the top. Add second cake layer. Frost with whipped cream or frosting of choice. Garnish with white chocolate shavings if desired.
