  • 2 carrots, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 6 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup frozen corn
  • ¼ cup fresh cilantro, chopped (optional)
  • Salt and pepper to taste
  • Lime wedges (for serving)

Instructions
 

  • Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add onion, garlic, bell pepper, and carrots. Cook until softened, about 5 minutes.
  • Add Spices: Stir in cumin, chili powder, and smoked paprika. Cook for 1 minute until fragrant.
  • Combine Ingredients: Add lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat to a simmer. Cover and cook for 25 minutes.
  • Add Corn: Stir in frozen corn and cook for an additional 5 minutes.
  • Season and Garnish: Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro and lime wedges.
