Ingredients
  

  • 1 cup old-fashioned oats
  • ¾ cup whole wheat flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup coconut oil or unsalted butter melted
  • ¼ cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup raisins chocolate chips, or nuts (optional)

Instructions
 

  • Preheat Oven: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a bowl, combine oats, flour, baking soda, salt, and cinnamon.
  • Prepare Wet Ingredients: In another bowl, whisk melted coconut oil, honey, egg, and vanilla extract until smooth.
  • Combine Batter: Stir wet ingredients into dry ingredients until combined. Fold in optional add-ins.
  • Shape Cookies: Scoop 2 tablespoons of batter per cookie onto the baking sheet, spacing 2 inches apart. Flatten slightly.
  • Bake: Bake 12–15 minutes until golden brown. Allow to cool before serving.
