1 lb 450g dried white beans (cannellini or navy), soaked overnight and drained 1 tablespoon olive oil 1 onion diced 2 carrots diced 2 celery stalks diced 3 cloves garlic minced 2 –3 cups cooked ham diced 6 cups chicken or vegetable broth 1 teaspoon thyme 1 bay leaf Salt and pepper to taste Optional: chopped parsley for garnish

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook 5–7 minutes until softened.
Add Beans & Ham: Stir in soaked beans, diced ham, broth, thyme, and bay leaf. Bring to a boil.
Simmer: Reduce heat and simmer 45–60 minutes, until beans are tender. Remove bay leaf. Season with salt and pepper.
Serve: Garnish with parsley and serve hot with crusty bread.
