Ingredients
  

  • 1 lb 450g dried white beans (cannellini or navy), soaked overnight and drained
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 2 –3 cups cooked ham diced
  • 6 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions
 

  • Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook 5–7 minutes until softened.
  • Add Beans & Ham: Stir in soaked beans, diced ham, broth, thyme, and bay leaf. Bring to a boil.
  • Simmer: Reduce heat and simmer 45–60 minutes, until beans are tender. Remove bay leaf. Season with salt and pepper.
  • Serve: Garnish with parsley and serve hot with crusty bread.

  • Make Ahead: Soup can be prepared a day ahead; flavors improve overnight.
