This Guinness Braised Beef Pot Pie is rich, hearty, and deeply flavorful. Tender beef slow-cooked in a Guinness gravy with vegetables, all tucked under a golden, flaky puff pastry crust—pure comfort in every bite!
Sear the Beef: Season beef with salt and pepper. Heat olive oil in a large pot over medium-high heat. Sear beef until browned on all sides. Remove and set aside.
Cook the Vegetables: In the same pot, add onion, carrots, and garlic. Sauté until softened. Stir in tomato paste and cook for 1 minute.
Deglaze with Guinness: Pour in Guinness beer, scraping up any browned bits from the bottom of the pot. Simmer for 2–3 minutes.
Add Broth and Seasonings: Return beef to the pot along with beef broth, Worcestershire sauce, thyme, and flour. Stir well, then cover and simmer on low heat for 1 ½ hours, until the beef is tender and sauce thickens. Stir in peas near the end.
Assemble the Pie: Preheat oven to 400°F (200°C). Pour the beef filling into a baking dish or individual ramekins. Top with puff pastry, trim excess, and crimp the edges. Brush with beaten egg.
