GREEK CHICKEN BOWLS WITH TZATZIKI (MEAL PREP FRIENDLY)

Ingredients
  

For the Greek Chicken:

  • 2 lb boneless skinless chicken breasts, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Tzatziki:

  • 1 ½ cups plain Greek yogurt
  • ½ large cucumber, grated and squeezed dry
  • 1 clove garlic, finely minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon olive oil
  • ¼ teaspoon salt
  • teaspoon black pepper

For the Bowls:

  • 3 cups cooked brown rice or quinoa
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 ½ cups cherry tomatoes, halved
  • 1 large cucumber, diced
  • ½ small red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • cup Kalamata olives, sliced
  • 2 tablespoons fresh parsley, chopped

Instructions
 

Marinate the Chicken

  • In a large bowl, combine the chicken with olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and black pepper. Toss well and let the chicken sit for at least 10 minutes while preparing the other ingredients.

Make the Tzatziki

  • In a small bowl, stir together the Greek yogurt, grated cucumber, garlic, lemon juice, dill, olive oil, salt, and black pepper. Refrigerate until ready to serve.

Cook the Chicken

  • Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken and cook for 7–9 minutes, stirring occasionally, until golden and cooked through to an internal temperature of 165°F (74°C).

Prepare the Bowl Ingredients

  • Divide the cooked brown rice or quinoa among four bowls or meal prep containers. Arrange the chickpeas, cherry tomatoes, diced cucumber, red onion, feta, and Kalamata olives around the grain.

Add the Chicken

  • Divide the cooked Greek chicken evenly among the bowls.

Add the Tzatziki

  • Spoon the tzatziki over the bowls or store it separately for meal prep to keep the ingredients fresh.

Garnish and Serve

  • Sprinkle with fresh parsley and serve immediately. For meal prep, seal the containers and refrigerate for up to 4 days.
