Ingredients

  • 1 lb ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 small head cabbage chopped
  • 1 cup cooked rice
  • 1 can 28 oz crushed tomatoes
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  • Cook the Beef: In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain any excess fat.
  • Add Aromatics: Stir in chopped onion and garlic. Cook for 2–3 minutes until softened.
  • Add Cabbage and Seasoning: Add chopped cabbage, paprika, thyme, salt, and pepper. Stir well and cook for about 5 minutes until slightly wilted.
  • Simmer the Soup: Add crushed tomatoes, tomato paste, and beef broth. Stir to combine. Bring to a boil, then reduce heat and simmer for 25–30 minutes until cabbage is tender.
  • Add Rice: Stir in cooked rice and simmer for another 5 minutes. Adjust seasoning if needed.
  • Serve: Ladle into bowls and garnish with fresh parsley. Serve warm with crusty bread.

Notes

  • Make Ahead: Tastes even better the next day as flavors deepen overnight.
  • Substitutions: Swap beef with ground turkey or pork for a lighter version.
  • Serving Suggestions: Pair with rye bread or a side salad for a complete meal.
  • Storage Tips: Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months.
