Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ½ cup brown sugar packed
  • 1 large egg
  • ¼ cup molasses
  • 1 teaspoon vanilla extract
  • ¼ cup granulated sugar for rolling

Instructions
 

Preheat the Oven:

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.

Make the Cookie Dough:

  • In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
  • In a separate large bowl, beat the softened butter and brown sugar together until light and fluffy. Add the egg, molasses, and vanilla extract, and continue beating until fully incorporated. Gradually add the dry ingredients and mix until combined.

Shape the Cookie Bites:

  • Roll the dough into 1-inch balls and place them onto the prepared baking sheet.

Bake:

  • Bake for 10–12 minutes, or until the cookies have slightly cracked on top and are firm to the touch. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Decorate (Optional):

  • Once cooled, roll the cookie bites in granulated sugar to give them a festive finish.
