For the Cake:

  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 tablespoon ground ginger
  • 2 teaspoons cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 2 large eggs
  • 1 cup molasses
  • 1 cup hot water

For the Cinnamon Molasses Frosting:

  • ½ cup unsalted butter softened
  • 3 tablespoons molasses
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 3 cups powdered sugar
  • 1 –2 tablespoons milk as needed

Instructions

Step 1 – Prepare the Cake Batter:

  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan. In a medium bowl, whisk flour, baking soda, ginger, cinnamon, cloves, and salt.

Step 2 – Cream the Butter and Sugars:

  • In a large bowl, beat butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, mixing well. Stir in molasses.

Step 3 – Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredients, alternating with hot water. Mix until smooth and well combined.

Step 4 – Bake:

  • Pour the batter into the prepared pan. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.

Step 5 – Make the Frosting:

  • In a bowl, beat butter until creamy. Add molasses, cinnamon, and salt. Gradually add powdered sugar. Add milk as needed to reach desired consistency.

Step 6 – Frost the Cake:

  • Spread the cinnamon molasses frosting evenly over the cooled cake. Slice and serve.

Notes

  • Make Ahead: The cake can be baked a day in advance. Store it covered at room temperature before frosting.
  • Frosting Tip: For a fluffier frosting, beat it for an extra minute to add more air.
  • Extra Spice: Add a dash of nutmeg or allspice to the batter for deeper flavor.
  • Storage: Store leftovers covered at room temperature for up to 3 days or refrigerate for longer freshness.
  • Serving Suggestion: Serve with whipped cream or a sprinkle of powdered sugar for added charm.
