Ingredients

  • 4 cod fillets about 6 oz each
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 garlic cloves minced
  • 1 teaspoon sesame oil
  • 1 tablespoon green onions for garnish
  • 1 teaspoon sesame seeds for garnish (optional)

Instructions

Make the Glaze:

  • In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil. Set aside.

Prepare Cod:

  • Pat cod fillets dry and season lightly with salt and pepper.

Sear Cod:

  • Heat olive oil in a large skillet over medium-high heat. Sear cod for 2–3 minutes on each side until golden and mostly cooked through.

Add Glaze:

  • Pour the glaze into the skillet and reduce heat to low. Let the glaze simmer and thicken, spooning it over the cod for 2–3 minutes.

Serve:

  • Garnish with green onions and sesame seeds. Serve with rice, steamed veggies, or noodles.

Notes

  • Substitute: This glaze works well with salmon or halibut.
  • Make it spicy: Add a pinch of red pepper flakes or sriracha.
  • Storage: Store leftovers in an airtight container for up to 2 days.
