Ingredients

  • 3 large egg whites
  • ½ teaspoon cream of tartar
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Mini chocolate chips for eyes

Instructions

Preheat the Oven:

  • Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.

Prepare the Meringue:

  • In a clean, dry bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add the sugar, 1 tablespoon at a time, while continuing to beat until stiff, glossy peaks form.

Shape the Ghosts:

  • Spoon the meringue into a piping bag fitted with a round tip. Pipe small, ghost-like shapes onto the prepared baking sheet, making sure to leave space between each.

Bake:

  • Bake for 1 hour or until the meringues are dry to the touch and easily lift off the parchment paper. Turn off the oven and leave the meringues inside to cool completely for at least an hour.

Decorate the Ghosts:

  • Once cooled, gently press two mini chocolate chips into each meringue to form the eyes.

Notes

Make Ahead:
Meringues can be made ahead and stored in an airtight container at room temperature for up to 1 week.
Customizing the Flavor:
For a fun twist, add a bit of almond extract to the meringue for a different flavor or tint the meringue with food coloring to create colorful ghost variations.
Serving Suggestions:
These spooky meringues are perfect for Halloween parties or as a light dessert after a festive meal. Serve them alongside other treats like pumpkin-shaped cookies or a spooky punch.
Allergy-Friendly Options:
These meringues are naturally gluten-free and dairy-free.
Storage Tips:
Store meringues in an airtight container at room temperature to keep them crisp. If they become soft, you can re-bake them at 225°F for 10-15 minutes to restore their texture.
