  • 2 lbs potatoes peeled and sliced
  • 6 slices bacon chopped
  • ½ cup onion finely chopped
  • ¼ cup apple cider vinegar
  • 2 tablespoons sugar
  • ¼ cup water
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions
 

Cook Potatoes

  • Boil potatoes in salted water until tender, then drain and set aside.

Cook Bacon

  • In a skillet, cook bacon until crispy. Remove bacon and set aside, leaving drippings in pan.

Sauté Onions

  • Add chopped onions to bacon drippings and sauté until translucent.

Make Dressing

  • Stir in vinegar, water, sugar, salt, and pepper. Simmer for 2–3 minutes.

Combine Salad

  • Combine potatoes, bacon, and dressing. Toss gently to coat.

Serve

  • Garnish with chopped parsley and serve warm.

Notes

  • Tip: Use waxy potatoes to hold their shape.
  • Variation: Add cooked bacon bits for extra crunch.
  • Storage: Keep warm and serve immediately; not ideal for refrigeration.
