GARLIC PARMESAN CHICKEN AND POTATOES

A one-pan wonder, this Garlic Parmesan Chicken and Potatoes recipe is packed with savory flavors. Crispy chicken and golden potatoes are roasted with garlic and Parmesan for a simple, yet delicious meal the whole family will love.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 4 medium potatoes diced
  • 4 cloves garlic minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • Fresh parsley for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a bowl, mix together olive oil, garlic, Parmesan cheese, oregano, thyme, salt, pepper, and paprika.
  • Toss the diced potatoes in half of the garlic Parmesan mixture until evenly coated.
  • Place the seasoned potatoes on the baking sheet and bake for 15 minutes.
  • Meanwhile, coat the chicken breasts with the remaining garlic Parmesan mixture.
  • After 15 minutes, remove the potatoes from the oven and push them to the sides of the baking sheet.
  • Place the chicken breasts in the center of the baking sheet.
  • Continue to bake for another 25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and potatoes are tender.
  • Garnish with fresh parsley and serve immediately.

Notes

  • You can use bone-in chicken for extra flavor, but adjust the cooking time accordingly.
  • For crispy chicken skin, broil the chicken for 2-3 minutes at the end of baking.
  • Swap out the potatoes for sweet potatoes for a different twist.
  • For a lighter version, use skinless chicken thighs instead of breasts.
  • The garlic Parmesan mixture can be made ahead and stored in the fridge for up to 2 days.
  • Leftover chicken can be stored in an airtight container for up to 3 days.
  • Add vegetables like carrots or broccoli to the pan for a complete meal.
