GARLIC HERB ROASTED POTATOES, CARROTS, AND ZUCCHINI

This easy side dish combines roasted potatoes, carrots, and zucchini with garlic and herbs for a flavorful, crispy, and healthy option. Perfect for weeknight dinners or holiday meals, it's colorful, satisfying, and oven-roasted to perfection.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
Toss the Vegetables:
In a large bowl, combine potatoes, carrots, and zucchini. Drizzle with olive oil, add garlic, herbs, salt, and pepper. Toss until evenly coated.
Roast:
