6 ounces 170g noodles of choice (spaghetti, ramen, or rice noodles) 2 tablespoons vegetable oil 1 tablespoon sesame oil 6 –8 cloves garlic finely chopped 2 –3 red chillies finely sliced (adjust to taste) 1 small onion sliced 1 small carrot julienned ½ bell pepper thinly sliced 2 tablespoons soy sauce 1 tablespoon chilli sauce 1 teaspoon vinegar Salt to taste Spring onions or sesame seeds for garnish

Cook Noodles: Boil noodles according to package instructions. Drain and toss with a bit of oil to prevent sticking.
Sauté Garlic and Chillies: Heat both oils in a wok over medium heat. Add garlic and chillies, and stir-fry for 30 seconds until fragrant.
Add Veggies: Add onion, carrot, and bell pepper. Stir-fry for 2–3 minutes until slightly tender.
Add Sauces: Stir in soy sauce, chilli sauce, vinegar, and salt. Toss to combine.
Add Noodles: Add cooked noodles to the wok and toss until well coated and heated through.
Serve: Garnish with chopped spring onions or sesame seeds and serve hot.
Make Ahead: Prepare the sauce mix ahead of time and refrigerate for quick meals.
