Garlic Butter Steak Bites and Potatoes is a quick, easy, and incredibly flavorful one-pan meal. Tender steak bites and crispy potatoes are cooked together and then coated in a rich and aromatic garlic butter sauce.

Ingredients
  

  • 1 pound sirloin steak or ribeye, or other tender cut, cut into 1-inch cubes
  • 1 pound small red potatoes quartered
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Garlic Butter Sauce:

  • ½ cup 1 stick unsalted butter
  • 4-6 cloves garlic minced
  • ¼ cup beef broth or white wine
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice optional, for brightness

Instructions
 

  • Prepare potatoes: Toss the quartered potatoes with 1 tablespoon of olive oil, salt, and pepper in a large bowl.
  • Sear potatoes: Heat the remaining 1 tablespoon of olive oil in a large skillet (preferably cast iron) over medium-high heat. Add the potatoes and cook, stirring occasionally, until they are golden brown and slightly tender, about 10-12 minutes. Remove the potatoes from the skillet and set aside.
  • Sear steak: In the same skillet, add the steak bites and sear for 2-3 minutes per side for medium-rare, or longer for your desired doneness. Season the steak with salt and pepper while cooking. Remove the steak from the skillet and set aside.
  • Make garlic butter sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant. Be careful not to burn the garlic.
  • Add broth and parsley: Stir in the beef broth (or white wine) and chopped parsley. Add the lemon juice, if using. Bring to a simmer and cook for 2-3 minutes, until the sauce has thickened slightly.
  • Return steak and potatoes to skillet: Return the steak bites and potatoes to the skillet and toss to coat them with the garlic butter sauce.
  • Serve: Serve the Garlic Butter Steak Bites and Potatoes immediately.

Notes

  • Steak: Sirloin is a good choice for this recipe, but you can also use other tender cuts of beef, such as ribeye or New York strip.
  • Potatoes: Small red potatoes are recommended, but you can also use Yukon Gold or other types of potatoes.
  • Garlic: Fresh garlic is essential for the flavor of this dish.
  • Butter: Use real butter for the best flavor.
  • Don't Burn Garlic: Burnt garlic will taste bitter. Keep the heat medium and watch it carefully.
  • Cooking Time: Adjust the cooking time for the steak to your desired doneness. Use a meat thermometer to ensure the steak is cooked to a safe internal temperature.
