In a large skillet, heat olive oil over medium-high heat. Add the steak and sear for 3β4 minutes per side, until browned and cooked to your liking. Remove from the skillet and set aside.
In the same skillet, add butter and minced garlic. Cook for 1 minute until fragrant.
Add halved baby potatoes to the skillet, cut side down. Cook for 10β12 minutes, stirring occasionally, until golden brown and tender.
Return the steak to the skillet with the potatoes and cook for an additional 2β3 minutes, allowing everything to come together and heat through.
