Ingredients

  • 4 (6-8 ounce) steaks (such as top sirloin, picanha, or ribeye), about 1-inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon smoked paprika

Garlic Butter Sauce:

  • ½ cup (1 stick) unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lime juice
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  • Prepare steak: Pat the steaks dry with paper towels. In a small bowl, combine the salt, pepper, garlic powder, onion powder, cumin, and smoked paprika. Rub the spice mixture evenly over both sides of the steaks.
  • Sear steak: Heat the olive oil in a large skillet (preferably cast iron) over medium-high heat. Once the oil is hot, add the steaks to the skillet. Sear for 3-4 minutes per side for medium-rare, 4-5 minutes per side for medium, or longer for your desired doneness. Use a meat thermometer to check the internal temperature of the steaks.
  • Make garlic butter sauce: While the steaks are searing (or after they have been removed from the skillet), melt the butter in a separate small saucepan over medium heat. Add the minced garlic and cook for 1 minute, until fragrant. Stir in the parsley, lime juice, red pepper flakes (if using), salt, and pepper.
  • Rest steak: Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute, resulting in a more tender steak.
  • Slice and serve: Slice the steaks against the grain. Drizzle the garlic butter sauce over the sliced steak. Serve immediately.

Notes

  • Steak Cuts: Top sirloin, picanha (a popular Brazilian cut), and ribeye are all good choices for this recipe. You can use other cuts as well, but adjust cooking times accordingly.
  • Doneness: Use a meat thermometer to ensure the steaks are cooked to your desired doneness.
  • Garlic Butter Sauce: You can adjust the amount of garlic and other ingredients in the sauce to your liking.
  • Resting: Resting the steak is crucial for ensuring a tender and juicy final product.
