Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • ¼ cup milk
  • 2 tablespoons melted butter
  • Vegetable oil for frying

Instructions

Prepare the Batter:

  • In a bowl, mix cornmeal, flour, sugar, baking powder, and salt. In another bowl, whisk together egg, buttermilk, milk, and melted butter. Combine both mixtures and stir until smooth.

Heat the Oil:

  • Pour about 1 inch of vegetable oil into a skillet and heat over medium-high heat.

Fry the Cornbread:

  • Once the oil is hot, spoon about 2 tablespoons of batter into the skillet for each cornbread. Flatten slightly with the back of a spoon. Fry for 2–3 minutes on each side, or until golden brown.

Drain and Serve:

  • Remove from the skillet and place on paper towels to drain excess oil. Serve warm.

Notes

  • For a spicier version, add finely chopped jalapeños to the batter.
  • Serve with honey butter for an extra touch of sweetness.
  • Use cast-iron skillet for an even, crispy texture.
