French Onion Sausage Rolls combine savoury sausage with caramelised onions and cheese, all wrapped in flaky puff pastry. These golden rolls are perfect for parties, appetisers, or a comforting snack.
1lb450g sausage meat or pork sausages (casings removed)
½cupgrated Gruyère or Swiss cheese
1teaspoondried thyme or fresh thyme leaves
1sheet puff pastrythawed
1eggbeaten (for egg wash)
Salt and pepperto taste
Sesame seedsoptional, for topping
Instructions
Caramelise the Onions:
Heat olive oil in a pan over medium heat. Add sliced onions and cook slowly for 10–15 minutes until soft and golden. Stir in sugar and balsamic vinegar, and cook for another 2–3 minutes. Set aside to cool.
Preheat the Oven:
Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
Prepare the Filling:
In a bowl, mix sausage meat, cooled onions, grated cheese, thyme, salt, and pepper until combined.
Assemble the Rolls:
Roll out the puff pastry into a rectangle. Spoon the sausage mixture along one edge. Roll tightly into a log, sealing the edge with egg wash. Slice into 10–12 pieces.
Bake:
Place rolls seam-side down on the baking tray. Brush tops with egg wash and sprinkle with sesame seeds if desired. Bake for 25–30 minutes or until golden brown and cooked through.
Notes
Make Ahead: Rolls can be assembled and refrigerated for up to 24 hours before baking.
Freezing: Freeze unbaked rolls and bake straight from frozen, adding 5 extra minutes to bake time.
Cheese Options: Substitute Gruyère with cheddar or mozzarella.
