Ingredients
  

For the Caramel:

  • ¾ cup granulated sugar
  • 2 tablespoons water

For the Flan:

  • 1 can 14 oz sweetened condensed milk
  • 1 can 13.5 oz coconut milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup shredded sweetened coconut optional

Instructions
 

Prepare the Caramel:

  • In a saucepan over medium heat, combine sugar and water. Cook without stirring until golden brown. Quickly pour the caramel into a 9-inch round baking dish, swirling to coat the bottom evenly. Set aside.

Make the Flan Mixture:

  • In a large bowl, whisk together sweetened condensed milk, coconut milk, eggs, and vanilla extract until smooth. Stir in shredded coconut if using.

Assemble and Bake:

  • Pour the flan mixture over the set caramel. Place the baking dish in a larger pan and add hot water halfway up the sides to create a water bath.

Bake:

  • Bake at 350°F (175°C) for 45 minutes or until the flan is set but slightly jiggly in the centre. Remove from the water bath and cool completely.

Chill and Serve:

  • Refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges and invert onto a plate.

Notes

Make Ahead:
This flan is best made a day in advance to allow the flavours to fully develop.
