This French Antilles Coconut Flan, or Flan Coco, is a creamy tropical dessert with a rich coconut flavour and silky caramel topping, perfect for a refreshing and indulgent treat.
In a saucepan over medium heat, combine sugar and water. Cook without stirring until golden brown. Quickly pour the caramel into a 9-inch round baking dish, swirling to coat the bottom evenly. Set aside.
Make the Flan Mixture:
In a large bowl, whisk together sweetened condensed milk, coconut milk, eggs, and vanilla extract until smooth. Stir in shredded coconut if using.
Assemble and Bake:
Pour the flan mixture over the set caramel. Place the baking dish in a larger pan and add hot water halfway up the sides to create a water bath.
Bake:
Bake at 350°F (175°C) for 45 minutes or until the flan is set but slightly jiggly in the centre. Remove from the water bath and cool completely.
Chill and Serve:
Refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges and invert onto a plate.
