Ingredients
  

Ingredients:

  • 1 lb Italian sausage mild or spicy, casings removed
  • 4 cups chicken broth
  • 3 cups peeled and diced potatoes
  • 2 cups kale chopped
  • 1 cup heavy cream
  • 1 medium onion diced
  • 2 cloves garlic minced
  • ½ teaspoon red pepper flakes optional
  • to taste salt and black pepper

Instructions
 

Cook Sausage:

  • In a large pot, cook sausage over medium heat until browned. Remove and set aside.

Sauté Veggies:

  • In the same pot, sauté onion and garlic until fragrant and translucent.

Cook Potatoes:

  • Add diced potatoes and chicken broth. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.

Add Sausage and Kale:

  • Add cooked sausage back to the pot, then stir in chopped kale. Simmer 3-5 minutes until kale is wilted.

Add Cream and Seasoning:

  • Reduce heat and stir in heavy cream. Season with salt, pepper, and red pepper flakes. Simmer 2 minutes.

Serve:

  • Serve hot with crusty bread if desired.
