These Easy Samoa Brownies are rich, fudgy, and topped with gooey caramel, toasted coconut, and a chocolate drizzle. Inspired by the classic Girl Scout cookie, they’re the perfect treat for coconut and chocolate lovers.

Ingredients
  

  • For the Brownies:
  • 1 box brownie mix plus eggs, oil, and water as directed
  • OR use your favourite homemade brownie recipe
  • For the Topping:
  • 2 cups sweetened shredded coconut
  • 1 ½ cups soft caramel candies about 25 caramels, unwrapped
  • 3 tablespoons milk or heavy cream
  • ½ teaspoon vanilla extract
  • ½ cup semisweet chocolate chips melted

Instructions
 

Bake the Brownies:

  • Prepare and bake brownies according to package directions in a 9x9-inch pan. Let cool completely.

Toast the Coconut:

  • Spread shredded coconut on a baking sheet. Toast in the oven at 350°F (175°C) for 5–8 minutes, stirring occasionally, until golden brown. Set aside.

Make the Caramel Mixture:

  • In a microwave-safe bowl, combine caramels and milk. Microwave in 30-second intervals, stirring until smooth. Stir in vanilla extract.

Add the Topping:

  • Mix toasted coconut into the melted caramel. Spread this mixture evenly over the cooled brownies.

Drizzle with Chocolate:

  • Melt chocolate chips and drizzle over the top using a spoon or piping bag. Let set before slicing.
